However, this activity requires innovation, and to achieve this, it is necessary to understand how the spaces where these activities occur affect livestock production. Moreover, few studies relate animal welfare and production environment to product quality: therefore, this work focused on integrating the environmental domains of animal welfare and management, with the lipid composition of milk, as a qualitative indicator, for which the variance and association of 25 variables characterized in 15 productive farms that deliver their production to Lactalis, Lasso-Cotopaxi, with the annual production values of the same, finding that the use of preventive sanitary practices favors the lipid composition. Although on the other hand, it was found that the use of preventive hygienic practices tends to lipid composition, as well as the management of mestizo animals and smaller farms, while not considering the domains of feeding, environment, and clean well-being of the animals, can damage the composition of the lipid component, it is also estimated that the environmental characteristics of the cattle farms that produce near the agricultural frontier are related to lower values of this factor. Therefore, it was concluded that there are indications that the lipid fraction depends on more factors than the traditional ones. Although these results are not conclusive, it is recommended that an analysis of the impact of the environment and livestock management in other Andean Basins and other productive factors be carried out.
