Ítem Restringido Rescate de una bebida ancestral de granos andinos tipo café elaborado por la Asociación Jatari Warmi(Universidad Católica de Cuenca., 2024) Santos Peralta , Alex Fabricio; Maldonado Cornejo, Manuel Esteban; 0107180994The Agroecological Association Jatari Warmi, located in the parish of Jadán, canton Gualaceo, province of Azuay, is a group of women agro-producers that promote practices to enhance the popular and solidarity economy through agroecological and sustainable food production. This study focused on promoting an ancestral beverage made from grains produced by the Association through its internal processes. To achieve this, post-harvest practices and seed conservation were investigated to determine their applicability in producing coffee-like beverages. In order to add qualitative value to the product for its establishment in the market, an internal product development process was established with the members, and an organoleptic evaluation was conducted with the public, together with a nutritional evaluation of its composition. Finally, its potentialities were consolidated, resulting in the development of a commercial product, "APU BY JATARI WARMI," which can be sold at Agroecological fairs and integrated into the Association's commercial portfolio, thus becoming one of the possible flagship products of the Association and generating higher profit margins. It was concluded that when developing a food product based on a recipe passed through generations, the use of techniques and knowledge specific to the environment is crucial and must be respected in all aspects, avoiding the gentrification of the process and thereby increasing its quality without interfering with the customs of the community, preserving knowledge and fostering fair trade.
