Ítem Acceso Abierto Determinación de coliformes totales y fecales en fresas expendidas en supermercados y mercados de la ciudad de Cuenca(Universidad Católica de Cuenca., 2024) Medina Orellana, Jeancarlo; Torres Arias, Emily Nayeli; Verdugo García, Ligia Mercedes; 1450038383; 1450139058Introduction: Diseases transmitted through food have become a worldwide problem, causing morbidity and mortality and affecting the socioeconomic development of most countries. In 2020, 5890 incidences of bacterial food poisoning were reported in Ecuador, a decrease compared to the previous year, when 12203 cases were recorded. In 2019, these incidents resulted from ingesting food that had been improperly handled and preserved, resulting in the transmission of pathogenic bacteria to consumers. Objective: To evaluate the prevalence of total coliforms and fecal coliforms in strawberries sold in supermarkets and markets in Cuenca. Methodology: A cross-sectional observational analysis was conducted. Samples were collected using a reception form, recording data such as date, temperature, and organoleptic characteristics. Results: As a result, it was determined that 0.39% of samples showed contamination with an unacceptable level of total coliforms (>104 CFU/g), and 37% showed an unacceptable level of E. coli (>102 CFU/g), which are outside the limits established in the Ecuadorian Institute of Standardization (INEN, by its Spanish acronym) 1529-8. Conclusion: The presence of total coliforms and E. coli was determined in supermarkets and markets in Cuenca, showing unacceptable levels, so it is necessary to have correct hygiene practices to ensure food safety.
