S. aureus is a microorganisms that generate these food pathologies and indicates improper food handling. Objective: To determine the proliferation of Staphylococcus aureus in fish ceviche sold in a market in Cuenca in May 2023. Materials and methods: The universe comprised 20 establishments selling ceviche in a market in Cuenca. Forty-eight samples of fish ceviche were collected to determine S. aureus in fish ceviche, using Compact Dry X-SA plates to establish the relationship between Staphylococcus aureus and fish ceviche sold in a market in Cuenca. Results: The presence of Staphylococcus aureus was determined in 67% of the ceviche sold in a market in Cuenca. Conclusion: The presence of Staphylococcus aureus was identified in 67% of the ceviche samples sold in a market in Cuenca.
