Thus, the objective of the present work was to determine the presence of Salmonella spp in beef intended for human consumption using the specific culture technique 3M Petrifilm Salmonella Express Plates. Samples were collected at the Santa Cruz municipal slaughterhouse in the province of Galapagos, located in the western part of the Bellavista parish, as well as in nearby tertiary farms. Based on the application of standardized and confirmatory tests, it was determined that there is indeed Salmonella spp. in both beef and surfaces in the municipal slaughterhouse, with the highest risk being found in the meat samples. In addition, in the third, the presence of the pathogen was lower than in the municipal slaughterhouse, a place nine times higher in risk. The 3M Petrifilm Salmonella Express Plates method was shown to be a reliable method for generating and confirming results, so its use is recommended in a future control proposal.
