In the “12 de Abril” market of the city of Cuenca, there are several stores where dairy products, such as artisanal cheeses, are sold. Objective: To identify Staphylococcus aureus in the production of fresh artisanal cheeses sold in the “12 de Abril” market, Cuenca. Materials and Methods: The materials used and the sampling process were executed under strict sterilization and asepsis standards. For the cultures, Compact Dry X-SA plates were used, which allow the growth of S. aureus; confirmatory assays, for the same microorganism (catalase and coagulase), were also used. Results: Out of 64 samples analyzed, 58% of the samples obtained showed contamination by S. aureus, and the concentration of these microorganisms exceeded the maximum permissible limit according to INEN 1528:12 standards in Ecuador. Conclusion: Staphylococcus aureus was identified in the production of fresh artisanal cheese sold in the “12 de Abril” market, Cuenca.
