According to the World Health Organization (WHO), approximately 1.8 million people die from diarrheal diseases annually, primarily as a result of consuming contaminated food or water. Therefore, the marketed products must be adequately managed to guarantee safety and comply with hygienic and sanitary measures. OBJECTIVE: To establish the presence of S. aureus in raw bovine milk, compare them with the permissible limits established in the INEN 9:2015 standard, and evaluate its hygienic quality, using samples taken at the “12 de Abril” Market, in Cuenca-Ecuador, during March 2023. MATERIALS AND METHODS: The study population consisted of the “12 de Abril” Market. Sixty-eight samples were collected to identify Staphylococcus aureus. These samples were cultured on Compact Dry X-SA plates and subjected to reductase tests to determine their hygienic quality. RESULTS: The results showed that 72% of the samples were contaminated with S. aureus, but 46% did not exceed the maximum permissible limit established in the INEN 9:2015 standard. Regarding hygienic quality, 62 of 68 samples were categorized as "good." CONCLUSION: The findings indicate the presence of S. aureus in milk samples, suggesting a possible contamination by vendors.
