- ÍtemAcceso AbiertoInfluencia del transporte sobre los parámetros físico-químicos de la carne de cobayos de la Asociación 13 de Junio(Universidad Católica de Cuenca., 2023) Quezada Cabrera, Miguel Alexander; Sanchez Condo, Ana Gabriela; Ortiz Alvarado, Maira Briscila; 0150311611; 0302628177The Association "13 de Junio" from the city of Nabón is a local producer group of guinea pigs and chickens organized to raise, transport, process, and market their animals, with the aim of having control from farm to slaughter. The purpose of the research was to characterize the technical parameters of the guinea pig transport system prior to slaughter. To determine if these parameters influence the physicochemical characteristics of meat quality, information necessary to strengthen the production chain and commercialization of guinea pigs from the city of Nabón and the southern part of the country. In the study, 25 samples were taken from 5 different batches based on the INEN 776 sampling regulations. The study and transport variables were Mode of Transport, Distance, Time, Period of the Day, and Density, as well as pH, Protein, and Texture in meat quality. To characterize the transport system, the most repetitive parameters were evaluated, and, in terms of meat quality, an ANOVA and a Tukey post hoc test were performed, with a CI of 95%. None of the study variables presented statistical differences (p>0.05), since they were within the ranges established by the standard. In conclusion, the transportation system, and the quality of the meat of the 13 de Junio Association comply with the Transportation System Management Guidelines and do not affect the final product, since the slaughter system is internal and relatively short.
