Foodborne diseases stand out in this scenario. There are more than 250 etiological agents capable of producing foodborne diseases, including Salmonella spp and Escherichia coli. Therefore, the objective of this study was to determine and quantify the presence of Salmonella spp and Escherichia coli in homemade dressings (mayonnaise and hollandaise sauce) in the market of the canton of Sígsig-Azuay-Ecuador. A non-experimental, descriptive, quantitative, cross-sectional, non-experimental study was carried out in which 25 establishments that sold handmade dressings were included, taking a total of 100 samples. To calculate the results, the Petrifilm plate inserts and the Peruvian Technical Standard A RM N°+ 615-2003 SA/DM were used. Data analysis was performed with the SPSS version 26 program, using descriptive and inferential statistics, using qualitative and quantitative variables, Chi-square (X^2). The results obtained showed absence/25g for Salmonella in the samples, while E. coli was present only in mayonnaise with 12% is reffering too. In conclusion, most of the samples showed no microbial contamination.
