This study aimed to determine the presence of Salmonella spp. in cattle beef intended for human consumption sold in the main markets of the city of Cuenca. Samples were collected from the refrigeration areas of the markets “El Arenal,” “10 de Agosto,” and “9 de Octubre” over a specific period. Biochemical tests were conducted to confirm the presence of Salmonella spp., determine the average bacterial load in each market, and analyze the main contamination vectors occurring during the sale of these foods. The results showed the presence of Salmonella spp. with a prevalence of 88% in two markets and 69% in the third market. Some samples exhibited a high bacterial load, indicating a lack of knowledge regarding sanitary handling in the markets studied. This research highlights the importance of implementing control measures and good practices to ensure the safety and quality of meat products. It also emphasizes the need for continuous microbial inspections of all meat products sold in the markets in the city of Cuenca. Keywords: Salmonella, cattle, markets, Cuenca.
